CHÂTEAU DE RIBEBON CABERNET FRANC
The top wine from Chateau de Ribebon, this majority Cabernet Franc blend showcases this classic Right Bank grape variety’s expression in the clay-limestone soils of the Ribebon plateau on Bordeaux’s Right Bank. Many of these majestic vines are over 100 years old, drawing mineral undertones from the limestone into the wine, along with deep, ripe fruit notes. The grapes are hand-selected parcel by parcel and sorted both in the vineyard and again at the winery.
As much as Bordeaux’s Right Bank is currently known for Merlot, Cabernet Franc is THE original grape of the region. Oak-aged for eighteen months, this wine is all about the mouthwatering taste of Cabernet Franc grown in ideal circumstances. Peppery aromas and a medium-high acidity make it remarkably refreshing. Easy to pair with grilled red meats, prime rib au jus and venison chops.
This Cabernet Franc wine is exclusive to Serge Dore Selections. Respect for the vine is the driving force behind winemaker Amelie Aubert’s philosophy and approach to making wine. “Quality is not possible with quantity,” she explains, “and I want my wine to capture the essence of this fantastic terroir.”freshness. |Terroir||10 hectares of 60 year old vines (on average: the oldest Cabernet Franc vines are over 100 years old) in limestone and clay soils on a plateau overlooking the Dordogne River. The limestone is under a layer of dense clay, which, combined with abundant underground water, provides an excellent fertility.|

|Winemaking||Complete de-stemming. 24 to 30 day vatting period; 4 to 5 day fermentation; 20-25 day maceration; in temperature-controlled cement tanks.|
