Sauvignon de Touraine
This Sauvignon de Touraine comes from a parcel of vines located at the extreme south of the vineyards on the lieu-dit “Les Pentes.” 100% Sauvignon Blanc vines are planted on a stony hillside, in clay, silica and sandy soils. This hillside micro-climate and soils with a high proportion of stones has a great influence on the wine, evident in the striking minerality at first sip. At harvest, the grapes are de-stemmed then pneumatically pressed. Low temperatures are key for the winemaking, after which the wine is aged on fine lees in stainless steel tanks until bottling in March.
